Celiac disease


Celiac disease is a medical condition in which the absorptive surface of the small intestine is damaged by a substance called Gluten.  Gluten is a structural protein that gives breads and foods elasticity.  Gluten is found in wheat, oats, rye, barley, and triticale. 

The severe damage caused to the intestine prevents normal absorption of carbohydrates, protein, vitamins and minerals, which are imperative for good health.  A wide range of symptoms may be present, but largely include severe gastrointestinal upset.  There is no cure for celiac disease.  A strict adherence to a gluten free diet for life is necessary and cross-contamination of gluten containing food products is of particular concern. 

Celiac persons must also be aware of hidden sources of gluten.  Food preparation and selection can be challenging but gluten free products are available commercially.
